Vegas Dining Sushi Special

By Glenn Haussman

These days it seems like for every Mario Batali there are two Jun Ichikawas (Japonais at The Mirage) serving up great meals in Las Vegas. In fact, for a city that’s in the middle of the desert, it’s amazing how much fish is to be found. And of all the fish, nothing beats that Japanese delicacy, sushi.

Recently, we mounted an expedition to Sin City to find out just where the best sushi can be found. It was a tough job, but someone had to do it. Here’s a good tip, make sure you enjoy the sake too. We sure did. Here are our suggestions.

Social House

It’s time to revisit Treasure Island. Not only has TI -- as it’s affectionately known-- been completely redesigned, the property’s dining experience has been considerably elevated. Take Social House, for example.  Perched above the popular Tangerine Lounge & Nightclub (to which guests can get VIP access), this is a great place to enjoy sushi, sake and some great outdoor dining with views of the Strip. Hint: Make reservations 30 minutes before the Sirens of TI show to get great views of this kitschy entertainment. If not eating sushi, suggest these highlights from the Pan Asian menu including Citrus Peel Miso Marinated Cod and Snake River Farms’ Kobe Beef-Three Ways: Carpaccio, Tataki and Tartar.  Dinner is available nightly from 5 p.m. until 11 p.m. and until 4 a.m. Tuesday through Saturday. For more information, check out www.treasureisland.com, or call toll free at (800) 944-7444.

Japonais

With its debut last fall at The Mirage, Japonais is redefining the concept of progressive Japanese cuisine. Originally from Chicago, this new addition is a masterful blend of French technique fused with clean and simple Japanese ingredients. Japonais offers an extensive menu that includes terrific cuts of sushi – the creamy toro melts away – and much more. Recommend the Spicy Mono, a spicy octopus roll topped with spicy tuna tartare and sweet unagi sauce; Tuna Tuna Salmon, delicate salmon tartare graced with sliced tuna, avocado sauce and wasabi tobiko sauce, or the Crispy Shrimp and Salmon, a crispy panko shrimp roll topped with marinated salmon sashimi and wasabi tobiko sauce. There is an extensive sake menu too making, which is worth multiple visits. It’s a good thing Japonais features a lounge as well. Call (702) 792-7979 for reservations or visit www.mirage.com.

Shibuya

Since 2003, Shibuya at the MGM Grand redefines the Japanese dining experience by combining traditional ingredients with modern techniques and offering an unrivaled sake cellar. Designed by superstar team Yabu Pushelberg, Shibuya takes its name and inspiration from a neighborhood of Tokyo known for its bustling urbanism and modern lifestyle. Japanese culinary creations share the limelight with one of the country’s best sake programs. The menu focuses on “traditional modern” cuisine, capturing distinct Japanese ingredients updated with the best of modern Japanese and American techniques. Shibuya’s full-spectrum Japanese menu is delivered via three distinct dining experiences including Sushi, Teppan and a la carte specialties – each in separate, yet adjoining, dining areas. Signature Dishes include Toro Tartar, Miso Wild Salmon, and Kampachi with fresh Yuzu & Black Truffle Oil.

Nobu

Located at the Hard Rock Hotel & Casino, Nobu has consistently been considered one of the top sushi outlets in the entire world. Created by Nobu Matshisha, he is known for his modern Japanese cuisine and freshest cuts of fish. While expensive, its worth it. The fish is actually flown in daily from Japanese fish markets. Since Nobu has multiple outlets he is not behind the counter year round. That job goes to Chef Morimoto who upholds Nobu’s quality and consistency with aplomb.
